Whole Wheat Pumpkin Pancakes



These pumpkin pancakes made with whole wheat are a healthy and tasty way to start the day. When you make them with whole wheat flour and real pumpkin puree, they taste like fall and give you extra fiber. Great for a cozy breakfast in the morning.

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 1 egg
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • Cooking spray or additional oil for the pan

Instructions:

Use a whisk to mix the salt, baking powder, baking soda, ground cinnamon, ground nutmeg, and whole wheat flour in a large bowl

You can mix the pumpkin puree, milk, egg, brown sugar, vegetable oil, and vanilla extract in a different bowl

Mix everything together well

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Don't mix it too much; a few lumps are fine

Warm up a griddle or nonstick skillet over medium heat

Use cooking spray or a little oil to barely coat the pan

For every pancake, put 1/4 cup of batter on the hot griddle

Once the top starts to bubble, flip it over and cook the other side until it's golden brown and done all the way through

Put the pancakes on a plate and keep them warm while you cook the rest of the batter

You can add maple syrup, whipped cream, chopped nuts, or anything else you like to the hot whole wheat pumpkin pancakes
