Elote Pasta Salad
Elote Pasta Salad is a delightful fusion of Mexican street corn flavors with classic pasta salad. Creamy, tangy, and slightly spicy, it's perfect for picnics, barbecues, or as a side dish for any occasion.
Ingredients:
- 8 oz pasta shells
- 2 cups cooked corn kernels
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- 1/4 cup crumbled cotija cheese
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
Cook pasta shells according to package instructions until al dente
Drain and rinse under cold water
In a large mixing bowl, combine cooked pasta, corn kernels, mayonnaise, sour cream, chopped cilantro, cotija cheese, lime juice, chili powder, garlic powder, salt, and pepper
Mix well to coat everything evenly
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together
Garnish with additional cilantro and cotija cheese if desired before serving
